Today I made pancakes from scratch, which I have never done before. Plus, they were not just regular pancakes, the were Gingerbread Pancakes. In the shape of gingerbread boys!
I was very surprised at how easy they were to make and delicious they tasted. Not too sweet, with the perfect amount of gingerbread flavor.
Here was my inspiration. A gingerbread person shaped bottle of maple syrup that I picked up this weekend at Cost Plus World Market. These syrup bottles were so cute that I got a few that will be paired with cans of gingerbread pancake mix for our teacher's Christmas gifts this year.
How to Make Gingerbread Man Shaped Pancakes
I took a small measuring cup to carefully pour the batter in the shape of gingerbread people onto the griddle. It took a few times, a few oddly shaped gingerbread boy or girl pancakes, and attempts at turning them over on the griddle. But I finally got the gingerbread people shape and cooking time down to a "t".
I must say...I definitely improved my pancake making skills about 51% today. It made for a happy morning.
♥ Easy Gingerbread Pancake Recipe ♥
Ingredients Directions to make these Gingerbread Man Pancakes:
- 1-½ cups flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ginger
- 1 teaspoon cinnamon
- 1 egg
- 1-¼ cups milk
- ¼ cup molasses
- 3 tablespoons vegetable oil
Directions to make these Gingerbread Man Pancakes
- In a bowl, stir together dry ingredients. Add the rest of the ingredients and stir just until combined.
- Heat a griddle on the stovetop to medium.
- Pour batter onto griddle. Try to make a gingerbread person shape.
- Cook on first side of pancake until puffed, full of bubbles and dry looking around edges.
- Flip pancake over and cook until second side is browned.
- I found the first pancake was a bit difficult to pick up and turn. The rest worked out pretty good!
♥ How to Make Butter Hearts ♥
If you thought I was crazy for cutting little butter pats into hearts well...don't! It's actually very easy. A few straight cuts off the edges of a slice of butter and then a smoothing of the edges.
Whala! You now have butter hearts! ♥

Sounds so good! A little tip I saw on Pinterest. You can try using a metal cookie cutter in your pan. Pour the pancake batter in the cookie cutter and there you have it- a perfect gingerbread man. Haven't exactly tried it yet, but it looks like it would work for something like this! My kids will love it!

I think that is a good idea to use cookie cutters. Hopefully they wouldn't get too hot. I have seen cookie cutters that are made for pancakes, but I don't remember where! Thanks for the tip.
